The application of ozone in food industry

Ozone is well-known for its special smell and it is a strong oxidant with the characteristics of good sterilization, no remains and being used directly on food. As a broad-spectrum high-efficient bactericide, its sterilization speed is 300—600 times as that of chlorine and it can sterilize rapidly various kinds of bacteria, sporangia, epiphytes and viruses, such as coliform, salmonella, golden staphylococcus, bacillus, black aspergillums and hepatitis B surface antigen ,etc.. Ozone is unstable badly and can decompose into oxygen by itself freely without any remains. The earliest experiment of ozone as bactericide was made in France in 1986 and the earliest utilization is in Cologne in 1909 that it was used to disinfect frozen beef to prolong its preservation period. Early in 1928, ozone has been used to disinfect eggs in Tianjin and in 80% of American frozen eggs warehouse by the end of 1930s. And during the past few years, ozone has been applied in food industry widely.

Among 1995-1996 years, Japan, France, Australia legislated in succession, allowing the extensive using of ozone in the food trade. In April of 1997, American food and medical administration bureau (FDA) gave up the restrictive policy of the ozone in food processing, acknowledging that the using of ozone was in accord with demand of GRAS (the safety standard in common use) in food course. By middle period of 1990s, many Sino-foreign joint venture food enterprises in our country have installed ozone generators in workshops, warehouses and food storage cabins and then in food containers and cold storage houses. As people attach importance of food quality while chemical disinfectants would leave chemical remains, ozone will become the most popular disinfections with fast development.
The followings are several successful aspects of the use of ozone:

1. Workshops and processing equipment

The traditional disinfection method is suffocating with formaldehyde and other chemical reagents. This method has been confirmed to have many shortcomings. Some recent foreign researches have proved that ozone is a better and safer constituent of formaldehyde because it can restrain the growth of coliform and microzyme greatly. And it is convenient and effectual to disinfect food processing plant, storage house and processing equipment with ozone.

You should connect ozone generator with central air conditioner ventilation and ozone is sent to its wind channel by vortex air blower and then to every clean district. According to Ministry of Public Health, the air disinfection ozone density should be 5 ppm. But in fact the disinfection in clean districts is not only for the air but also surface of all objects, so the normal density should be more than 10ppm. Make the conditioner running for 1.5--.2.0 hours before being on duty and 1 hour after being off duty, which can guarantee the swim fungus and subside fungus meet the requirements of SSOP.

It can be seen from the examine report of food factories using ozone that the amount of fungusi is totally qualified and ozone can replace formaldehyde suffocating completely. Meanwhile it reduces the consumption and the nonmanufacturing operation. If the clean district or test area has no ventilation but only fresh air intake, FD-Q-H air disinfector can be chosen. It is controlled by computer and is timed to send ozone to every district even every corner. Besides this point, it is movable.

 

2. Sterilization of space

It is useful to sterilize frozen food and drinks, processing plants of meat, eggs ad milk and packing workshops with ozone which can also get rid of the bad taste. For example, use ozone to disinfect for 2 hours in a 150 m3 workshop (the ozone concentration is about 4×10-6), compare the following data:

As for other rooms, ozone generators can be chosen to install inside the room directly. And disinfection time can be fixed according to your needs and generator can stop automatically after disinfection. You can choose different kinds of generator according to the room size only if meeting with the demand of ozone concentration.

 

3. Sterilization of articles’ surface

It is needed to sterilize raw materials, instruments and equipments, packing articles and operating room in the course of food production. The traditional method is ultraviolet radiation disinfection but it is not overall and the effect reduces quickly and it has no effect on some germs. It is introduced in “Disinfection Technical Specifications” that the surface germs can be killed after surrounded by ozone for some time

Appendix: A Brief Introduction of Air Purifying and Sterilization series

It accords with the standard of “Disinfection Technical Specifications" of Ministry of Public Health. And the Air Purifier combines many technical fruits and can meet the demands of SSOP. In addition, DJ-Q and FD-Q have long lifetime and simple structures and is light and convenient to install and operate.

Scope of application:

1.        The DJ-Q series cooperating with HVAC: using electrolytic water ozone generating technology, with the characteristics of high ozone concentration (3 times as that of discharge technology), good output, can be used to disinfect air and processing plants.

2.        FD-Q (A) series: It adopts 15000v cold cathode discharge technology and can produce lots of ozone and cooperate with HVAC or special air disinfector to disinfect workshops in big areas.

3.        FD-Q (H) hanging series: Used in part and separate room’s sterilization (air and surface), including control zone packing shop facility, etc.


4. Disinfection of food equipment, containers, tools and production processes

 

Used in the processing of juice and drinks

Ozone can be used to submerge and wash pipes, production equipment and containers to disinfect them in the process of juice and drinks. This method has there advantages: most of the germs and viruses on the surfaces of the pipes, equipment and containers would be washed away by ozone water; the residual ones would be killed by ozone water; this can also avoid the secondary pollution of drained chemical disinfectant and the residual chemicals. In addition, this technology can combine with membrane separation technique and germ free bottling system, used in the production of soy, vinegar and wine to improve products’ quality and grade.

 

Used in vegetable processing

It can also be applied in vegetable processing such as preserved szechuan pickle, radish, cucumber and other pack food. Some companies often adopts high-temperature processing after packing so as to prolong its term guarantee, while it damages products’ color and quality and consume

 

Used in aquatic products

Sprinkling ozone water on the surfaces of aquatic products before freezing can effectively control the germs. Its effects are mainly in three aspects:

      Kill microorganism-----disinfection and sterilization

      Oxidize various smelly minerals and organic matters----deodorization

      Oxidize metabolism outcomes----restrain metabolism

Appendix: DJ disinfection ozone water system. It can generate ozone water with the concentration of more than 2-10mg/hour and the consumption not more than 0.6KW/m3, treating 0.5—5 t water an hour.

DJ-Y series adopt PEM ozone generating technology to produce high concentration ozone, which is mixed with water to form high concentration ozone water (disinfectant liquid) through secondary mixing and secondary absorption. The ozone water can kill bacilluscoli, staphylococcus and other bacteria, and HbsAg antigen within 10 minutes and decompose agricultural medicine and chemical fertilizer rapidly. It is often used to wash equipment, working tables, pipes, vessels and the like.

The disinfecting rate with objects’ surfaces of this ozone liquid is 99.9% and the undissolved ozone can be removed by certain device, which would ensure the standard ozone concentration in public places. Besides after the quick and effective disinfection, it has no residual and pollutive materials. The whole device is small and easy to operate with low consumption and high safety limits.
